Why You'll Love This Dessert

When you are craving a gooey melt-in-your-mouth dessert and need it fast, blondies are the way to go. It's the easiest recipe for cookie bars. You will love the butterscotch flavor alongside the semi-sweet chocolate chips. These Chocolate Chip Blondies are a one-bowl, no-mixer dessert that you will be making over and over. The buttery and gooey texture and lots of chocolate chips make them totally irresistible!Serve still slightly warm with a scoop of vanilla ice cream for a la mode treat.

What are Blondies bars?

Blondies are similar in texture to brownies but do not contain cocoa powder or chocolate. They have a butterscotch flavor thanks to the mixture of brown sugar and butter. Some say it is a bar version of chocolate chip cookies, however unlike the cookies, typically blondies do not have granulated sugar but only brown sugar.

What You'll Need:

  • unsalted butter
  • brown sugar
  • vanilla extract
  • egg
  • all-purpose flour
  • baking powder
  • baking soda
  • salt
  • chocolate chips

How to make blondies dessert bars?

Blondies are very simple to make.

  • You only need a bowl and a wooden spoon or spatula to make the dough. No mixer needed!
  • Simply, stir together melted butter and brown sugar.
  • Add vanilla and egg and stir until the egg is incorporated.
  • Add the dry ingredients and stir together.
  • The dough should be thick and sticky.
  • You can add chocolate chips, lemon zest and white chocolate, any chocolate candy, pretzels or swirl in caramel sauce or fudge sauce.
  • Bake until the edges are puffed up and the top looks dry but the center wiggles when you shake the pan gently. Let the bars cool completely before cutting.

Storing:

Since these cookie bars are soft and chewy (thanks to melted butter and brown sugar), I recommend storing them in a container with lid. They will keep the texture and not dry out.

Ingredients

  • ½ cup unsalted butter melted
  • 1 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350° F.

  • Line an 8" square baking pan with parchment paper or aluminum foil. Set aside.

  • In a large mixing bowl, stir together melted butter and brown sugar. Stir well.

  • Add vanilla extract and egg and stir until the egg is well incorporated.

  • Add dry ingredients and stir until the dough is thick and sticky.

  • Stir in chocolate chips.

  • Spread the dough in prepared pan. Bake for 20 to 25 minutes. For me the magic number was 22 minutes. The edges should be puffed up and the top appear dry but if you gently shake the pan it should still jiggle slightly.

  • Let the bars cool in pan completely.

  • Cut into squares and serve.

These are the best blondies ever! They have such a good flavor from the brown sugar. I might have slightly browned my butter when melting it, because they had a slightly browned butter/rich, caramel-like flavor. They’re chewy and delicious even the next day. I made them exactly as written. Love how simple and quick they are to make, too.

FAQs

Are blondies meant to be gooey in the middle? ›

A good blondie should be chewy, gooey in the middle and firm around the edges. If you want to add an additional egg yolk to this recipe to make the blondies super gooey, you can! Just to clarify, that would be 1 whole egg plus 2 egg yolks. Try it if you like gooey blondies!

What's the difference between brownies and blondies? ›

Both have chewy textures. However, blondies have a much lighter and softer taste than brownies. The ingredients used in brownies are where the two recipes diverge the most. Blondies use vanilla extract and brown sugar instead of cocoa powder to get their flavor, while brownies use chocolate and cocoa.

Why are my blondies still gooey? ›

Don't Overbake Blondies!

These blondies are meant to be a little gooey and soft. You can remove them from the oven just before they look like they're completely done because the residual heat of the oven and the pan will continue to cook them. Also, be sure your oven is actually at the temperature it says it is.

What's the difference between a blondie and a Brookie? ›

Visually, it is easy to tell a brookie and a blondie apart. Blondies are paler in color, while brookies have layers of chocolate marbled in. While a brookie houses both a cookie and a brownie taste, blondies use brown sugar as their primary flavoring.

Can you eat undercooked blondies? ›

So if your blondies are very wet, then they're most likely undercooked. In the UK, eggs with the Red Lion seal of approval are safe to eat raw or undercooked. So you can slightly undercook blondies and brownies if you prefer a fudgier texture.

What makes brownies fudgy vs cakey? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

How to tell if a blondie is done? ›

Brownies and Blondies

The toothpick test should produce a few errant crumbs stuck to the tester but not a smooth smear of batter. The edges will feel firm to the touch (not just set but actually kind of firm and crispy) and the surface will feel soft when pressed but will not spring back.

How do you firm up gooey brownies? ›

Solution: if you still think they're too soft once cooled, cook them for a few minutes longer next time. But first, pop them in the fridge overnight and have a bit of faith.

Why do blondies sink in the middle? ›

Over mixing the eggs: If you over mix the eggs, that can incorporate more air into the batter and cause them to sink.

What is a royal brownie? ›

Royal brownies are sweet and full of cocoa, sugar, and applesauce. These brownies come out smooth and fudgy and you can add walnuts for some additional texture.

What did blondies used to be called? ›

History. The first recipe for blondies ever was published in 1896 by Fannie Farmer. She was a pioneer of modern American cookery. Interestingly they were called “brownies” when the recipe first came out but it contained vanilla and molasses instead of cocoa. which gave the blondies their golden color.

What is the old version of brownies? ›

How do I know if my blondies are cooked? ›

Check if the blondies are cooked by giving the tin a gentle shake, they should be mostly set but a little bit of a wobble in the centre is fine. Cool completely in the tin – the blondies will sink in the middle as they cool, just like brownies.

Why are my blondies not setting in the middle? ›

Over mixing the eggs: If you over mix the eggs, that can incorporate more air into the batter and cause them to sink. Underbaking the bars: Pulling the blondies out of the oven before the center has had time to bake through can also cause them to sink in the middle. Try baking them for a couple extra minutes next time!

Is it normal for brownies to be gooey in the middle? ›

If the brownies still look wet or aren't pulling away, they aren't done. Even fudgy brownies will pull from the edges once they've finished baking. You'll see that the edges look dry while the middle still looks soft or slightly wet. Chewy and cakey brownies will have dry edges with firmer-looking centers.
