Chicken wings are great appetizers for entertaining guests for all parties, game day, girl’s night in, and any occasion. You can never go wrong with a platter of these party pleasers for guests to munch on as starters or finger foods. It is loved by all, adults and kids alike.

These party wings are easy to make, healthy as it is baked and not fried. While some wing recipes would use excess oil as a marinade, all you need for these wings is 2 teaspoons of cooking oil of choice.

There is no need for a dip or sauce with this recipe. The chicken is baked to perfection, it is tender, crispy, and flavourful. It is finger-licking good! If you must have a dip or sauce then I have got you with my simple homemade dip made from mayonnaise, Greek yogurt, honey, herbs, salt, and pepper. I haven’t got a name for it yet but it works a treat every time.

While this is a baked chicken wings recipe, they can also be oven grilled or cooked on open flame bbq

How to make dry rub chicken wings

Preheat the oven at 180C/365F. place a baking rack on a baking tray. The tray can be lined if desired. Cooking the wings on a rack as opposed to in the baking tray would result to a crispy skin. The fat would be rendered out but the meat would still be tender.

Make the dry rub: to a shallow bowl add all of the dry rub ingredients and mix to combine then set aside.

Prep the chicken wings: cut the chicken wings into wingettes (wing flat) and drumettes, if it doesn’t come separated yet. This is quite easy to do, simply locate the joint between the wings, using a sharp knife, press firmly to cut and separate the joints. Discard the wing tips if desired. Please be careful when completing this task, at no point should your fingers be on the joint when doing this.

There is no need to wash the chicken but if you must then do so safely. Pat the wings dry with a kitchen towel or kitchen paper then transfer into a large bowl. Add the oil to the chicken and mix to combine. (the oil lets the seasoning stick on the chicken)

Mix: add the wings to the rubs a few pieces at a time making sure it is well coated. Transfer seasoned chicken to the baking rack. Repeat the process until you’ve exhausted the rub and wings

Bake: Place the baking rack in the middle of the oven and bake at 180C/365F for 20 minutes then another 20 minutes at 200C/400F flipping it halfway through.

Air fryer dry rub chicken wings

Preheat the air fryer at 190C/380F

First you prep the chicken, clean and pat dry then transfer into a bowl.

Add oil to the wings and mix to combine followed by the seasoning, mix until well coated.

Arrange the wings into the air fryer basket in a single layer ensuring they are spaced to allow for air circulation. You may have to cook in batches to avoid overcrowding the basket. Cook for 20 minutes shaking or flipping the wings every 10 minutes. after 20 minutes, increase the heat to 200C/400F and cook for another 5 minutes or until the chicken wings are crispy and golden brown.

Serve as desired and enjoy!

Note: you can cook frozen wings in the air fryer. Place the frozen wings in the air fryer and air fry for 2 minutes just until it has thawed a bit. season the wings in the air fryer and cook for a total of 30 minutes shaking the basket every 10 minutes. the internal temperature of cooked chicken should register 165F/64C

Top tips

Reduce the heat if the chicken begins to burn quickly than usual, this might burn the coating (marinade) and may result in bitter-tasting wings. Nobody wants that!

Allow about 4 to 6 Chicken wings per person if you would be hosting. For example, if you would be catering for 10 guests and this wings is one of the main appetizers then you will need to cook at least 40 pieces.

Separate the whole wings into flats and drumettes, more pieces would go around this way. Alternatively, buy chicken wings that has already been separated from the shops. Less work for you.

How long to bake chicken wings

There are two ways to cooking chicken wings in the oven. You can start cooking on low temperature as low as 150C/300F then increasing it to about 200C/400F for crispy skin. This method would take up to an hour to cook.

The second method is cooking the wings at 180C/360F for 20 to 25 minutes then increasing the heat to 200C/400F for another 10 to 15 minutes.

  • 2 tsp vegetable oil sub for other cooking oil with a high smoking point

Dry rub ingredients

  • 1 tbsp Brown sugar
