When my kids were small I made homemade pancakes frequently, but haven't made them since we became empty nesters; we've become health conscious (white flour and butter you know). But my husband got a craving for homemade pancakes this morning, so I looked for recipes since it had been so long and I had forgotten the proportions. I give this recipe 5 stars and my husband said they were the best he had ever had, in fact, he said they were "monumental"! I can't think of anything to improve on this recipe.

I always like trying different recipes in search for perfection. And, I think these are as close to perfect pancakes as you can get. I use whole buttermilk (not 2%). Also, I use my Lodge cast iron griddle w/ coconut oil.

When I read Pam's recipe, I ran to my recipe box to compare her recipe to my grandfather's. He had a small cafe in Montgomery, LA back around 1920. The recipe is exactly the same to the tsp. It is the best pancake recipe ever. They come out light and fluffy. You can whip them up in no time. This recipe is a keeper for at least another 100 years.

My kids never used to ask for me to cook them anything. Then I made these! I accidentally skipped the salt this morning. Still just as good, minus the extra 2,300 mg of sodium! Will try it next time with unsalted butter to cut the sodium by a total of 60%.

I used this recipe to introduce my students to quickbreads- pancakes and explained how the baking soda and powder reacts with the buttermilk making the pancakes light and fluffy. We added cinnamon and vanilla and served them with plain syrup.

I've tried several "from scratch" pancake recipes but none were worth the extra effort over a packaged baking mix until these. YUM! These are fabulous. They are light with a fresh taste. This is the only recipe I will use. I don't like honey so I didn't use the syrup recipe. Also, I use a little less salt. One try and you'll be hooked.

I misread the recipe and added the honey butter syrup to the batter (I let it cool a few minutes) and they turned out wonderful. I made them for a work party and they were a hit. People were wrapping them around link sausages and eating them plain they were so good. Everyone wanted the recipe!

Excellent pancakes! Light, airy, and delicious. I made the recipe exactly as written. Don't overmix the batter! Will be using this as my "go to" recipe for pancakes. (They freeze well, also.)

this recipe was so simple and delicious! I actually omitted the egg (it was not needed to hold the pancake together); I susbtituted applesauce in place of the butter for the pancakes since the syrup has butter; I also used plain yogurt in place of the buttermilk and it worked great! yield: 6-8 servings

FAQs

How long should you leave pancake batter to rest? ›

A – If you are going to let your batter rest, leave it for at least 30 minutes in the fridge. If you've got time, leave it for longer – even overnight in the fridge. Some say that there is no point in letting the batter rest and there's certainly no harm in using it straight away. Go ahead if you're in a rush.

What does adding more eggs to pancakes do? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

What does butter do in pancakes? ›

It might not be obvious to our eyes, but the melted butter will essentially lubricate our batter, making it very hard for the gluten molecules to latch onto each other and create a matrix. This a good thing, and it will lead to a softer crumb.

Does milk instead of water make pancakes better? ›

Can I Use Water Instead of Milk in Pancakes? Milk adds both flavor and texture to pancake batter, so if you are looking to make pancakes without milk, a simple swap to water doesn't always do the trick. For pancakes made without milk, you'll want to add some flavor through melted butter and vanilla extract.

What is the best oil to use when making pancakes? ›

Using a healthier oil in preparing/ cooking them can give a nutritious boost to your pancakes. Olive oil is a great alternative because it is high in healthy fats that can lower your risk of heart diseases. Coconut oil is another butter or shortening substitute with potential health benefits.

What happens if you don't rest pancake batter? ›

Resting the batter allows the gluten in the flour relax thus resulting in more tender pancakes BUT if are making thick fluffy American style pancakes containing a raising agent then do not rest the batter.

Should I refrigerate pancake batter overnight? ›

How can I make the pancake batter ahead of time? To make ahead the pancake batter, prepare it in the evening. Then, cover the bowl, and refrigerate overnight. In the morning, give the batter a quick whisk just before you want to use it.

What makes pancakes fluffy and rise? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

What can you add to pancake mix to make it better? ›

Some mixes already have flavors added to them, but a little more spice never hurt anyone. I like to add a dash of cinnamon, nutmeg, and/or vanilla extract to give it more depth in flavor. You can even add a dash of cocoa powder for some chocolate pancakes!

Do you use Pam or butter for pancakes? ›

Pancakes. There's no one right answer for pancakes: Some chefs are fans of using butter, while others swear by greasing their pan or griddle with oil. If you go with the former, a high-fat butter, sold in a stick (not whipped!), works best for this breakfast food.

What is the pancake rule? ›

The idea behind the first pancake rule is that it's okay if the first one doesn't turn out perfectly; it's a practice round for getting the cooking conditions just right. Once you've made the necessary adjustments, the subsequent pancakes are expected to turn out fantastic.

What is a square of butter called? ›

Generally, a pat of butter is a single portion of butter, typically served up in a foil packet, tiny plastic tub, or artfully molded and shaped into a ball or square.

Is it okay to use oil instead of butter in pancakes? ›

If you mean to cook the pancakes in oil or spray instead of butter then yes. Butter tastes better, in my opinion, but is easy to burn. Oil is less likely to burn so might be easier to use.

What is the best way to cook pancakes? ›

Heat a lightly oiled griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.

Can I use oil instead of melted butter in pancakes? ›

In recipes calling for melted butter like muffins, quick breads, or pancakes, try substituting an equal amount of vegetable oil or melted coconut oil. Vegetable-based oils add moisture and tenderness. And coconut oil, while dairy-free, is also solid at room temperature, so it will act similarly to butter.

Can I substitute melted butter for oil in pancake mix? ›

It couldn't be easier to substitute butter for oil using a 1:1 ratio. This should work with olive, canola, vegetable, and coconut oils. Simply melt and cool the butter to room temperature, then continue with your recipe. (If the recipe calls for ½ cup oil, use ½ cup melted and cooled butter.)
