I like to make the best gluten-free sausage in a blanket recipe when I’m making pizza, as this recipe uses 1/3 of the dough from our pizza dough recipe. Being able to make a pizza plus, these rolls out of one recipe is a real-time saver, so it gives you a couple of meals to serve.

The Best Gluten-Free Sausage in A Blanket Recipe

Ingredients:

  • 4 pieces of gluten-free sausage (can be pre-cooked and leftover)
  • 1 small white onion, thinly sliced
  • 1/2 tbsp of butter or oil or dairy-free alternative.
  • Pinch of salt and pepper
  • 1/4 C shredded mozzarella cheese
  • 1 tbsp Parmesan cheese
Pro Tip: You can either skip the cheese or use your favourite non-dairy cheese in place.

Customization option: roasted pepper or hot pepper rings

Directions:

  • Make pizza dough.
  • Roast gluten-free Italian sausage in a 375°F oven for 45 minutes flipping them over halfway through.
Pro Tip: Bake the sausage in a foil and parchment-lined baking dish or pan for ease of clean-up.
  • Allow Sausage to cool slightly.
Pro Tip: You can even bake your sausage ahead of time, or make extra sausage for dinner.
  • Thinly slice your onion.
  • In a frying pan, melt the butter or non-dairy-alterative/heat oil and add the onion.
  • Over medium-high heat, cook the onions until they are caramelized (soft and brown)
  • Season onions with a pinch of salt and pepper.
  • Remove from heat and allow to cool.
Pro Tip: You can even prepare the onions the day before.
  • Grate mozzarella cheese on the fine grate of a box grater.
  • Mix the mozzarella and Parmesan cheese in a bowl.
  • Cut each sausage link into 4-5 pieces, you can customize them to whatever size you like.
  • Divide dough into as many links of sausage as you have, take a piece of the dough and roll it out evenly.
  • Cut the rolled-out dough into as large a piece as it will take to cover the entire piece of sausage.
  • Onto the edge of the pizza dough, place a few pieces of onion, cheese, and/or hot peppers (or sauteed)
  • Roll and pinch edges to close
  • Place on a parchment-paper-lined cookie sheet.
  • Brush the top of the rolls with oil using a pastry brush.
  • Sprinkle sesame seeds over the top of the rolls.
  • Bake the rolls at 375°F for 30 minutes, or until the pizza rolls are light golden brown.
